You don’t have to know me very well to know that I love and adore salad. If you have shared a meal with me in my home it will in all likeliness involve salad and if we eat out, I will almost always order a side salad. I struggle to find great salads that are done the way I love them to buy in ‘on the go’ lunch places.
Part of what I love about my salads are the many ingredients that go into them! This means that making my own salad in the office isn’t always the easiest but I have found a totally genius way around this! So here it is, the recipe for an easy and healthy salad for lunch at the office!
I can’t be dealing with soggy lettuce or equally the lack of dressing so layering your ingredients in a jar means that you can have the best of both!
In today’s salad I have the following:
That’s lettuce, cucumber, avocado, sundried tomatoes, pistachios and pine nuts! Delicious!
Make sure that you have a clear separation between the ingredients that can sit in the dressing and those that can’t. This will ensure that you will have crunchy lettuce and juicy sun dried tomatoes.

You can get lots of different sizes depending on what you are making.
Start by roasting your pine nuts and pistachios over a low heat. Constantly swirl the saucepan so that they get an even roasting.
Place these, with the nuts in the bottom of the jar.
I love avocado which is the perfect barrier for your juicy ingredients and your crispy ingredients (for those of you that don’t like avo you could substitute this for a lemon that you can squeeze over your salad when you are ready to eat it). Cut the avo (or lemon) in half but make sure you keep the pip in. This stops the avo from turning brown.
Add your lettuce and mint on top (and feta or anything else that can’t sit in the dressing).
