I, like most other health enthusiasts the world over, am obsessed with Deliciously Ella. Her insanely scrumptious recipes have given healthy eating a makeover and shows us that you do not need to give up on the yum-factor just because you want to be healthy. The one recipe that I don’t think I could ever live without again is her Superfood Bread. I always have a fresh loaf in my house and each and every person I have given it to is a total convert!
When I was home in South Africa last month I discovered that everyone there was Banting mad. Tim Noakes has taken South Africa by storm and apparently if you mention the word ‘carb’ you will have to put a penny in the swear jar! You can imagine how smug I was when I told them that just because they were Banting didn’t mean that they had to give up bread… along with almost every other joy that comes from the kitchen! (I’m obviously not the biggest fan although I know that it certainly does work for some). You have to give this a go at least once, you won’t regret it.
2 x Cups of Water
1.5 x Cups Pumpkin Seeds
1 x Cup Quinoa Flakes
1 x Cup of Almonds
1 x Cup of Sunflower Seeds
.5 x Cup Flaxseeds
3 x Heaped Tablespoons of Psyillium Husk Powder
2 x Tablespoons of Chia Seeds
2 x Tablespoons of Mixed Herbs
Start by blending the almonds, quinoa flakes and 1 cup of pumpkin seeds until a soft flour is formed.
Add this with the rest of the dry ingredients into a mixing bowl and slowly add the water. This mixture needs to stand for at least an hour so that the water can soak in.
You will have to decide whether you like the mixed herbs in it or not. Some people love it but others, who have a sweeter tooth, don’t like the idea of putting something sweet like jam on bread with a herb flavour.
You can substitute the quinoa flakes for various other gluten free options if you cannot find them. Buckwheat is a great one. The pysillium husks are what binds the ingredients so unfortunately you cannot leave it out but they aren’t that hard to find, I found some at my local health food shop.
This bread smells immense when it is in the oven! The other gorgeous thing about it is that you get an entirely new flavour from it should you choose to toast it. It is jam packed with goodness and the perfect way to start your day.
